Coconut Rice Bibingka

2 1/2 pounds mochi (sticky) rice
12 ounces coconut milk
1 pound light brown sugar
1 can condensed milk

Rinse the rice under cold water and cook in a ricer. Combine the
coconut milk and 1 1/4 cups of brown sugar in a saucepan and
cook over medium heat, stirring constantly. Gradually the
mixture will thicken. Allow about 20 minutes.

Preheat an oven to 350 degrees F. Put the cooked rice into a
bowl. Stir the coconut milk mixture and the remaining brown
sugar into the hot rice. Place the entire mixture into a baking
pan and pour condensed milk on top and spread around. Bake for
at least 15 minutes, or until the rice is set. Cut into small
pieces and serve warm.
